Bruschetta Afumata Smoked halibut slices, Gorgonzola cheese, capers, walnuts, on whole grain bread, topped with a honey, balsamic vinegar, fresh dill sauce Markham 2000 Chardonnay This Napa Valley Chardonnay is packed with lots of bright tropical fruit aromas plus an interesting layer of toasty, spicy oak. The highly focused fruit characteristics of apple and pear follow through on the palate with subtle hints of fresh honeysuckle. Quack Tostada Pan seared duck breast, red, yellow and poblano peppers, roasted garlic, sesame oil and seeds over red leaf lettuce. Markham 2001 Sauvignon Blanc This polished and well-rounded wine has subtle flavors of ruby grapefruit. While the complex aromas of pineapple, honeysuckle and ripe honeydew melon explode from the glass, the crisp, clean palate shows floral hints Maximillian Aussie Vegetable and goat cheese strudel, cumin encrusted lamb tenderloin, tomatillo, green chilles, garlic, cilantro salsa Markham 2000 Merlot Bold, dense and complex, this Merlot has everything. Starting with aromas of raspberry, plum and cedar, the flavors of ripe loganberries, cherries and sweet oak marry in the finish. Here is a superb wine that can be enjoyed now and for many years to come. Isosceles Triangle 1998 Cabernet Sauvignon Blackberry jam with a hint of cedar is the first impressions that this Cabernet Sauvignon expresses. The palate has plenty of juicy cherry and berry flavors married together with balanced tannins and a lush, velvety finish. This wine will age gracefully into the 21st century.
