Etrusco Fresh mozzarella, spinach, garlic in a fillo pouch, drizzled with an olive oil, balsamic vinegar, anchovies, capers, red onions, grain mustard dressing topped with caviar 2000 Estate Sauvignon Blanc Our very first fully estate grown Sauvignon Blanc. Done in 60% stainless steel it is crisp and bright with an intriguing array of melon, pear, and pineapple. This wine finishes clean with a little spice and a distinct lemon peel finish. The wine’s excellent balance, structure, and crisp acidity will keep the flavors fresh for many years to come. Caliterra Roasted red peppers, pepperonchinis, red onions, fresh garlic, mesculin mix, olive oil, fresh basil, dikon radish, cucumbers over aged, smoked provolone croutons. 2000 Estate Syrah Produced with fruit combined from our two vineyards and will replace the former Santa Barbara County Syrah. We feel this Syrah greatly expresses the “terroir” of our Purisima Mountain Vineyard. It has intense fruit with deep layers of plums, anise, and truffles. It has a full mouth feel with earthy tannins. The year 2000 brought perfect weather to fully ripen this Syrah, which drinks incredibly mature for such a young wine. Cellar time is 5-7 years. Rapa Nui Tahitian albacore tuna fillets topped with cream cheese and avocado, with a sun dried tomato, black peppercorn, red and yellow peppers, cilantro balsamic beans 1999 Cuvee Le Bec Our southern Rhone blend made up of 53 % Grenache, 22% Mourvedre and 25% Syrah. Putting your nose to the glass will reveal intense red berry fruit and rich spicy aromas. Great upfront berry flavors meld into the mid palate of earthiness and spice, finishing off with a wonderful balance between tannins and acidity. This wine will develop for years to come. Fin Dulce 1999 Atelier Another personal best for Beckmen Vineyards. Made of 63% Cabernet Franc & 37% Merlot, this wine shows off its aromatic prowess with berry, licorice, and cedar notes in the nose. The '99 Atelier comes forward with blackberry and currant flavors, followed by engaging flavors of earthiness and mint. The finish is long and spicy with pleasing tannins which lengthen with bottle aging.
