2005 Pavilion Sauvignon Blanc Napa
Sauvignon Blanc is pale gold in hue, with pleasing nose of green grass, citrus, papaya and white flowers. Crisp and well balanced.

Fideos Latino
Toasted fideos fritters with chorizo sausage, bay shrimp, saffron chipotle stock, garlic parsley Dijon dressing.
2005 Pavilion Chardonnay Napa
This wine is dominated by fresh fruit including pear and apple mingling with apricot and lemon while oak toast adds a light spicy note. Tropical fruit flavors including pineapple greet the tongue with a refreshing acidity that carries the wine to a smooth and long finish.

2006 Pavilion Pinot Noir Edna Valley
Bing cherry and framboise aroma with layers of sandalwood, and baking spice. Flavors of cherry, wild strawberry and cranberry follow through on the medium palate.

Salmon fillet stuffed with crabmeat, herbed goat cheese, roasted cauliflower and sweet onions, haricot verts — roasted peppers coulee EVOL-garlic puree-rice vinegar- Worcestershire dressing.
2004 Pavilion Merlot Napa
The Merlot adds flair and nuance to well ripened plum and blackberry flavors. Chocolate and cassis mingle together in delicate tannins leading to a soft, lingering finish.

2005 Pavilion Cabernet Sauvignon Napa
The Cabernet shows intense aromas of black cherry and vanilla with hints of caramel, cassis, and toasty oak. Soft silky tannins greet a palate that bursts forth with cherry and red currant flavors.
