Sabal Palmetto Hearts of palm, garbanzo beans, garlic, caper berries beignets served with a spicy remoulade. 2005 Viognier Pronounced (vee-own-yay), this aromatic white wine is filled with classic aromas of peach and honeysuckle with a long, lingering mouth feel complemented by citrus flavors. Bright fruit is well-balanced with crispness that leads to a delightful, refreshing finish offering a great alternative to Chardonnay. Chiaravalle Artichoke hearts, cherry tomatoes, pickled red cabbage, green onions, roasted red peppers, roasted beets, peppitas, over salad greens, with a EVOL balsamic reduction and peppery ranch dressing, Grana Padano. 2005 Un-Oaked Chardonnay The Un-Oaked Chardonnay is produced in 100% Stainless Steel, both fermented and aged. This "un-oaked" approach produces a bright, fruit forward style wine that is aromatic, clean and refreshing on the palate. The appealing aromas of citrus and tropical fruit lead to generous fruit flavors of green apple, melon and pineapple finishing with well-balanced acidity. Etrusci Italian sausage, caramelized leeks, pine nuts, spinach and goat cheese fillo purses over rosemary bean medley. 2005 Petite Syrah This Petite Syrah follows tradition with its deep, concentrated purple color and aromas of blueberries and vanilla oak. The flavors are filled with intense black cherry and blueberry that blend well with the firm tannins and toasty oak. Remarkably well balanced and quite drinkable young. Nahuatl 2004 Firma Firma - Italian for "signature". The 2004 firma is primarily a blend of Italian and Bordeaux varietals. The Barbera and Sangiovese are known for their bright cherry flavors, good acidity and subtle tannins. The Cabernet Sauvignon adds structure and depth, without altering the fruit style. This wine is wonderfully balanced with bright ruby color and black cherry fruit flavors that combine with rich flavors of currant from the Cabernet Sauvignon.
